Mini Vanilla Bundt Cakes

Gluten-Free, Refined Sugar-Free
Ingredients:

  • 1 cup oat flour
  • 1/4 cup coconut sugar
  • 1 tsp baking powder
  • 1 egg
  • 1/4 cup Greek yogurt
  • 2 tbsp oat milk
  • 1 1/2 tbsp coconut oil
  • 1 tsp vanilla extract

Glaze:

  • 1/2 cup refined sugar-free powdered sugar
  • 1 tbsp Greek yogurt
  • 1 tsp vanilla extract

Directions:

  1. Preheat the oven to 180ºC/356ºF and lightly grease a mini bundt cake pan for that perfect shape and presentation.
  2. In a bowl, combine the dry ingredients – oat flour, coconut sugar, and baking powder.
  3. In another bowl, whisk together the wet ingredients – egg, Greek yogurt, oat milk, coconut oil, and vanilla extract – until smooth and creamy.
  4. Gently fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix.
  5. Pour the batter into the greased mini bundt cake pan, distributing it evenly.
  6. Place the pan in the preheated oven and bake for 10-15 minutes or until a toothpick inserted into the cakes comes out clean.
  7. While the cakes are baking, prepare the glaze by whisking together the refined sugar-free powdered sugar, Greek yogurt, and vanilla extract until smooth.
  8. Once the cakes are baked, remove them from the oven and let them cool for a few minutes before carefully removing them from the pan.
  9. Drizzle the delectable glaze over the cooled mini bundt cakes, adding a touch of sweetness and visual appeal.

  • 1 tbsp greek yoghurt

  • 1 tsp vanilla extract

Method

  • Preheat the oven to 180ºC/356ºF and lightly grease a bundt cake pan
  • Combine the first four dry ingredients (flour, sugar/sweetener, baking powder) in a bowl
  • In a separate bowl, whisk together the remaining wet ingredients until smooth and creamy
  • Add the wet ingredients with the dry and combine just until everything is fully incorporated
  • Pour the batter into a greased pan
  • Place into the oven and bake for 10-15 min
  • In the meantime, whisk the ingredients for the glaze together in a small bowl and set aside
  • Drizzle the icing on top and enjoy!
