Ingredients:
- 1 cup oat flour
- 1/4 cup coconut sugar
- 1 tsp baking powder
- 1 egg
- 1/4 cup Greek yogurt
- 2 tbsp oat milk
- 1 1/2 tbsp coconut oil
- 1 tsp vanilla extract
Glaze:
- 1/2 cup refined sugar-free powdered sugar
- 1 tbsp Greek yogurt
- 1 tsp vanilla extract

Directions:
- Preheat the oven to 180ºC/356ºF and lightly grease a mini bundt cake pan for that perfect shape and presentation.
- In a bowl, combine the dry ingredients – oat flour, coconut sugar, and baking powder.
- In another bowl, whisk together the wet ingredients – egg, Greek yogurt, oat milk, coconut oil, and vanilla extract – until smooth and creamy.
- Gently fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix.
- Pour the batter into the greased mini bundt cake pan, distributing it evenly.
- Place the pan in the preheated oven and bake for 10-15 minutes or until a toothpick inserted into the cakes comes out clean.

1 tbsp greek yoghurt
1 tsp vanilla extract

- Preheat the oven to 180ºC/356ºF and lightly grease a bundt cake pan
- Combine the first four dry ingredients (flour, sugar/sweetener, baking powder) in a bowl
- In a separate bowl, whisk together the remaining wet ingredients until smooth and creamy
- Add the wet ingredients with the dry and combine just until everything is fully incorporated
- Pour the batter into a greased pan
- Place into the oven and bake for 10-15 min
- In the meantime, whisk the ingredients for the glaze together in a small bowl and set aside
- Drizzle the icing on top and enjoy!
