Mini Vanilla Bundt Cakes

Like a normal cake, but smaller and more aesthetic.

Serves 8 | GF RSF
Ingredients:
1 cup oat flour
1/4 cup coconut sugar
1 tsp baking powder
1 egg
1/4 cup greek yoghurt
2 tbsp oat milk
1 1/2 tbsp coconut oil
1 tsp vanilla extract

Glaze:
1/2 cup rsf powdered sugar
1 tbsp greek yoghurt
1 tsp vanilla extract

Directions:
1. Preheat the oven to 180ºC and lightly grease a bundt cake pan
2. Combine the first four dry ingredients (flour, sugar/sweetener, baking powder) into a bowl
3. In a separate bowl, whisk together the remaining wet ingredients until smooth and creamy
4. Add the wet ingredients in with the dry and combine just until everything is fully incorporated
5. Pour the batter into a greased pan
6. Place into the oven and bake for 10-15 min
7. In the meantime, whisk the ingredients for the glaze together in a small bowl and set aside
8. Drizzle the icing on top and enjoy!
