Fluffy Apple & Tahini Pancakes⁣

Pan-fried apples, topped with coconut yoghurt and a tangy tahini sauce. The best thing to have to start your lazy Sunday morning 😌⁣

Serves 8 | V DF RSF⁣
Ingredients:⁣
Pancakes
1 cup wholemeal flour⁣
1 tbsp baking powder⁣
1 tsp cinnamon ⁣
Pinch nutmeg⁣
Pinch sea salt⁣
1 cup oat milk⁣
1 tbsp maple syrup⁣
1 tbsp coconut oil⁣
1 tbsp flaxseed meal⁣
1/4 cup water ⁣
⁣
Fried apples:⁣
4 apples⁣
1/2 cup water ⁣
1 tsp cinnamon⁣
2 tsp maple syrup ⁣
⁣
Toppings:⁣
Tahini⁣
Maple syrup⁣
Coconut yoghurt⁣


Method:⁣
1. Chop up the apples into cubes
2. Add the apples to a frypan with 1 tbsp of water, cinnamon, and maple and cook on a medium heat
3. Stir continuously until they brown, add the rest of the water during the cooking process until they are caramelised, then place aside
⁣4. Whisk together the dry ingredients in a bowl
5. In a small dish mix the flaxseed meal with 1/4 cup of water and set aside for 5 minutes
6. In a separate bowl quickly whisk the oat milk, flaxseed mixture, maple syrup, and coconut oil
7. Add the wet ingredients to the dry ingredients and mix together
8. Heat the pan to medium heat, oil with a 1/2 tsp of coconut oil
9. Pour 1/4 cup batter into the center and flip and repeat until all the mixture is gone
10. Stack pancakes, add toppings, and enjoy!
