Brownie Batter Zoats

If you’ve never braved zucchini oats before, this recipe will convert you. It’s like a bowl of brownie batter for breakfast, plus sneaking in a some veg doesn’t hurt too. ⁣


Serves 2 | V DF RSF⁣
Ingredients:⁣
2/3 cup rolled oats ⁣
1/4 cup zucchini⁣
2/3 cup oat milk⁣
1 1/2 cup water ⁣
1/2 tbsp maple syrup⁣
1 tbsp cacao ⁣
1 tsp tahini ⁣
1 tsp cinnamon ⁣
⁣
Choc tahini sauce:⁣
2 tbsp cacao ⁣
1 tbsp tahini⁣
1 tbsp maple syrup⁣
1/3 cup boiling water ⁣
⁣
Toppings:⁣
Banana⁣
Dark chocolate ⁣
⁣
Method:⁣
1. Grate the zucchini and add to a pot with oats, milk, water, maple syrup, cinnamon and sea salt. Cook for a min of 15 mins until all the liquid is absorbed
2. Add in cacao and tahini with a touch of water and cook for another few minutes
3. Test the oats, wait until they are creamy and soft. If not, add a little more water. When the oats are just starting to form again, serve into a bowl
⁣4. Add tahini chocolate toppings into a bowl. If the sauce needs more thinning add more boiling water and place aside
⁣5. Add toppings to the porridge and enjoy!
