This warm and cool granola bowl tastes like a deconstructed slice of banana bread – it’s pure comfort. Caramelising bananas should be mandatory for all granola bowls.
The chia yoghurt also adds so much fluffiness and is great for those mornings when you’re a little hangrier than usual!
Serves 2 V GF DF RSF
Ingredients:
Granola:
• 1/3 cup buckwheat groats
• 1/4 cup rolled oats
• 1/4 cup sunflower seeds
• 1/4 cup coconut flakes
• 1/4 cup almonds
• 1/4 cup walnuts
• 1 tbsp coconut sugar
• 1 1/2 tsp cinnamon
• 1 tbsp coconut oil
• 1 tsp vanilla extract
• Pinch sea salt
Chia yoghurt:
• 1 tsp chia seeds
• 1/3 cup coconut yoghurt
Toppings:
• Banana
• Cinnamon
• Almond butter
Method:
1. Preheat oven to 180°C
2. In a small bowl mix the chia seeds with coconut yoghurt and set aside.
3. Add the granola ingredients together in a bowl with melted coconut oil and bake for 10 minutes or until browned.
4. Slice a banana in half and bake in the oven until golden.
5. Add the granola, chia yoghurt, almond butter and banana to the bowl.
6. Sprinkle cinnamon and chia seeds to top it off ✨
