Back to this dish, this recipe is an all time favourite and quite possibly the ultimate when it comes to breakfast comfort food.
Serves 2 | V DF RSF
Ingredients:
Porridge:
1/3 cup rolled oats
1/3 cup quick oats
2/3 cup oat milk
1 1/2 cup water
1 banana
1/2 tbsp maple syrup
1 tsp cinnamon
Pinch sea salt
Nut crumble:
1/3 cup walnuts
1 tsp cinnamon
1 tbsp coconut sugar
1 tbsp coconut oil
Toppings:
Banana
Coconut yoghurt
Cinnamon
Maple syrup
Method:
1. Preheat the oven to 180°C
2. Place the crumble ingredients together in a small bowl
3. Add to a tray and bake for about 5 minutes or until golden
4. Place the sliced banana on a tray, drizzle the remaining oil from the nuts bowl on top of the bananas
5. Grill in the oven until lightly toasted
6. Add the oats, banana, milk, water, maple syrup, cinnamon, and sea salt together
7. Cook for a min of 15 mins when all the liquid is absorbed
8. Test the oats, wait until they are creamy and soft. When the oats are just starting to form again, serve into a bowl
9. Add toppings to the bowl and enjoy!
Banana Bread Porridge
