Being Australian, avocado toast is a frequent breakfast, lunch, snack, and sometimes dinner. Everyone has their “go-to” and for a while, this one has been mine.
I’m gonna say it, dill is probably the greatest herb on earth. I’m a lover of all herbs of course, but there is a special place in my heart for dill.
Serves 1 V DF RSF
Ingredients:
2 slices pumpernickel rye bread
1 avocado
Balsamic vinegar
Hummus
Dill
Lime
Sea salt flakes
Method:
1. Cut the avocado, peel off the skin, and slice
2. Toast the rye bread, smear hummus, and add sliced avocado
3. Squeeze lime juice, drizzle with balsamic vinegar, dill, sea salt flakes, and pepper
