I love how versatile medjool dates are. They are a constant in my kitchen. The citrus tones of the key lime blend make for a perfect combination with the date and the creamy almond butter. I ate so many!

Serves 12 V GF DF RSF
Ingredients:
12 medjool dates
Almond butter

Key Lime Filling:
1/2 cup soaked cashews
2 tbsp lime juice
1 tbsp coconut milk
1 1/2 tbsp coconut oil
1 tbsp maple syrup
1 tsp vanilla extract
Pinch of greens powder

Method:
1. In a container add cashews and fill with water, store overnight
2. In a blender add the key lime filling ingredients and blend
3. Cut dates in half lengthways
4. Spoon filling into the dates
5. Refrigerate for 1 hour
6. Drizzle with almond butter, enjoy!
