I was sorting through some of my old things today and stumbled across some recipes that I was compiling back in 2014!
One of them was a snickers oatmeal bowl. It was one of my first creations when getting into oats again. I grew up with 2-minute microwave oats and didn’t think I liked oatmeal. I can’t go a week without a bowl now! 😂

Serves 1 | DF RSF
Ingredients:
1/3 cup rolled oats
1/2 cup oat milk
1/2 cup water
1 tsp cacao
1 tsp maple syrup
Pinch sea salt
1 tsp vanilla bean extract
Coconut salted caramel:
1 tin sweetened coconut milk
Peanut butter sauce:
1 tbsp peanut butter
Boiling water
Toppings:
Banana
Coconut salted caramel
Peanut butter sauce
Chopped peanuts
Method:
1. Place 1 tin of sweetened coconut milk in a slow cooker with water for 8 hours or overnight
2. Carefully remove with thongs and allow to cool completely before opening
3. Stir in sea salt and store in a sealable jar
4. To make the porridge add oats, cacao, maple, sea salt, vanilla bean, milk, water, salt to a pot and mix together
5. Cook for a min of 15 mins until all the liquid is absorbed
6. Test the oats, wait until they are creamy and soft. If not, add a little more water
7. When the oats are just starting to form again, serve into a bowl
8. In a bowl add peanut butter and 1 tsp of boiling water at a time while mixing until desired consistency
9. Top the porridge with all the toppings and enjoy!
