Loaded Sweet Potato

Something about a warm baked sweet potato that is so comforting. This Mexican inspired loaded potato is the ideal dinner when you feel like something simple. So soft and creamy and so delicious!

Serves 2-4 | V GF DF RSF
Ingredients:
2 sweet potatoes
Cherry tomatoes
Spring onion
Coriander
Pickled Onion
Chilli flakes
Salt & pepper

Aioli:
3 tbsp greek yoghurt
1 tbsp lemon juice
1 tsp minced garlic
Salt & pepper

Avocado sauce:
1/2 avocado
2 tbsp greek yoghurt
1 tbsp lemon juice
Salt & pepper

Method:
1. Preheat the oven to 200ºC
2. Slice sweet potatoes in half
3. Wrap in foil and bake for 40 min – 1 hour depending on the size of potato
4. Remove from oven and place aside
5. Make the aioli and avocado dressing in seperate bowls and mix together, scoop on top of potato
6. Slice the tomatoes, coriander, spring onion and sprinkle on top
7. Add all other toppings and enjoy!

Directions

  • Preheat the oven to 200ºC
