PB & J Nice-Cream Oatmeal Recipe | Creamy and Nutritious Breakfast

Vegan, Dairy Free, Refined Sugar-Free

Ingredients:
Oatmeal:

  • 1/3 cup rolled oats
  • 1/3 cup quick oats
  • 2/3 cups oat milk
  • 1 cup water
  • 1 tsp vanilla extract
  • Pinch of sea salt

Jelly Nice-cream:

  • 2 cups frozen strawberries
  • 1 cup frozen banana
  • 1/2 tbsp maple syrup
  • 1/2 tsp vanilla extract

Toppings:

  • Sliced strawberries
  • Peanut butter
  • Scoops of nice-cream

Method:

  1. In a pot over low heat, combine the oatmeal ingredients and cook for approximately 20 minutes, stirring occasionally until the oats are soft and the mixture thickens.
  2. While the oatmeal is cooking, blend the frozen strawberries, frozen banana, maple syrup, and vanilla extract together until smooth, creating a jelly nice-cream.
  3. Once the oatmeal reaches the desired consistency, transfer it to serving bowls.
  4. Top the oatmeal with slices of fresh strawberries, dollops of peanut butter, and generous scoops of the jelly nice cream.
  5. Enjoy the delightful combination of creamy nice-cream, warm oatmeal, and the sweetness of fresh berries and peanut butter.

Ingredients

  • Oatmeal:
  • 1/3 cup rolled oats

  • Jelly Nice-cream:
  • 2 cups frozen strawberries

  • 1 cup frozen banana

  • Toppings:
  • Strawberry

  • Peanut butter

Directions

  • Add the porridge ingredients to a pot over low heat for 20 minutes
  • Meanwhile, blend the nice-cream ingredients together until smooth
  • Test the oats, and wait until they are soft, when the oats are just starting to form again, serve into a bowl and add toppings
