Raspberry Danish Bircher

I’ve recently been enjoying danishes again when I go out for coffee, so was inspired to recreate it into a creamy bowl of overnight oats.

Serves 2 | V DF RSF
Ingredients:
1/3 cup rolled oats
1/3 cup quick oats
1/4 cup raspberries
1 tbsp chia seeds
1/2 cup oat milk
1/2 tbsp rice malt syrup
1 tsp vanilla extract
2 tbsp coconut yoghurt

Toppings:
Raspberries
Crumble
Cashew butter

Method:
1. Add the raspberries to a bowl and microwave for 30 seconds
2. Mixture together until smooth
3. Pour in the other ingredients together besides the yoghurt and refrigerate overnight in a sealed container
4. The next day add in the coconut yoghurt and mix well
5. Place on other toppings and enjoy!
