This dessert is so delicious and is the perfect little dish for 2. It’s not too heavy and you can even save some for tomorrow’s breakfast, cause why not 💁♀️
Serves 2 V GF DF RSF
Ingredients:
Crumble:
• 1/3 cup oats
• 3 tbsp oat flour
• 1/4 cup desiccated coconut
• 1/4 cup ground almonds
• 2 tbsp coconut sugar
• Handful chopped pecans
• 1/4 cup coconut oil
Apple:
• 2 apples
• 1/4 cup apple purée
• 1 tbsp coconut sugar
• 3 tsp cinnamon
• 1 tsp all spice
• 1 tsp nutmeg
Toppings:
• Greek yoghurt (or any you prefer)
• Almond butter
Method:
1. Preheat oven on 180°C.
2. Slice up apples and mix in a bowl with spices, sugar and apple purée.
3. Add to a baking dish and pour leftover purée on top.
4. Bake for 10 mins and remove.
5. Mix the dry ingredients together, pour melted coconut oil on top and crumble over the baked apple dish.
6. Place the dish back in the oven and bake for another 20-30 minutes (or until golden).
7. Serve with your choice of yoghurt and a drizzle of almond butter. Enjoy!
