Roasted Rhubarb Granola Bowl

For so long this was my staple breakfast before work. I’d make a big batch of granola on Sunday and it would last the week. So simple, but so good. Top with with warm roasted rhubarb and cool coconut yoghurt and it’s a dream.

DF RSF
Ingredients:
Roasted Rhubarb:
2 sticks rhubarb
1/2 orange
1 1/2 tbsp coconut sugar
1/2 tsp vanilla bean extract

Granola:
1 cup oats
3/4 cup buckwheat groats ⁣
1/4 cup cashews
1/4 cup sunflower seeds⁣⁣
1/4 cup pumpkin seeds
1 tbsp oat flour
2 tbsp coconut oil⁣
2 tbsp honey

Toppings:
Coconut yoghurt

Method:⁣
1. Mix all the granola ingredients together in a large bowl
2. Pour out the mixture on to a baking tray
3. Bake in the oven on 180°C for about 10 minutes or until golden
4. Allow to completely cool and store in an airtight container
5. In a small bowl mix the orange, vanilla and coconut sugar
6. Slice up rhubarb add to a baking tray and pour on the mixture
7. Roast in the oven on 180°C for 5-10 min
8. Add the rhubarb, granola and coconut yoghurt in a bowl and enjoy!
