Potatoes in their greatest form. I have been making my own oven baked fries for a few years now, as it’s so easy and tastes the best. When using fresh herbs with a citrusy garlic aioli sauce – you’ll finish the whole bowl yourself.
Serves 2 | V GF DF RSF
Ingredients:
• 3 potatoes
• Olive oil
• Fresh rosemary
• Fresh thyme
• Sea salt flakes
Aioli:
• 1/4 cup greek yoghurt
• 2 tsp garlic
• 1 tbsp lemon juice
• 2 tsp sea salt flakes
• 2 tsp olive oil
Method:
1. Wash and peel potatoes. Slice potatoes into a ‘chip’ size of your choice.
2. Pat raw chips dry with a paper towel, as this will help cook the chips evenly. Put raw chips into bowl, add olive oil, salt, pepper, rosemary and thyme and mix well.
3. Evenly spread raw chips on a greased baking tray, allowing for space between chips. Cook in oven at 200°C for half an hour, or until golden.
4. Add aioli ingredients together in a bowl and mix well. Serve with fries and enjoy!
