Truffle Eggs Benedict

The epitome of elevating the “ordinary”. I’m an obsessor of all things truffle. Completely fell in love with it in Paris and I’ve never gotten over it.

⁣

Serves 2 GF DF RSF⁣
Ingredients:⁣
2 slices gf rye bread⁣
1 avocado ⁣
1 egg⁣
Handful parsley ⁣
⁣
Truffle hollandaise:⁣
3 tbsp almond milk cheese ⁣
2 tbsp oat milk ⁣
1 tsp truffle paste ⁣
1 tsp truffle salt⁣
1 tsp lemon juice⁣

Method:⁣
1. ⁣Boil a pot of water
2. Place in an egg for 6 1/2 minutes then place in an ice bath for 5 minutes
3. Toast the bread
4. Slice avocado and place on the toast
5. Peel the egg and place on toast
6. Mix the hollandaise ingredients together in a dish then heat it up in the microwave for 10 seconds
7. Pour truffle hollandaise over the egg and sprinkle more truffle salt and parsley, enjoy!
