Ingredients:
Wrap:
- 1 cup spinach
- 2 eggs
- Optional: Salt and pepper
- Optional: Parsley
Fillings:
- Pesto
- Capsicum
- Spinach
- Red onion
- Tomatoes
- Mushroom
- Parsley
- Avocado
- Balsamic vinegar
- Seasonings of choice
Method:
- Begin by cutting up your preferred vegetables and sauté them in a pan until tender. Set aside.
- In a blender, combine the eggs and spinach, along with any optional ingredients like salt, pepper, or parsley.
- Grease a crepe pan and pour the egg and spinach mixture onto it.
- Cook the wrap on low to medium heat for approximately 10 minutes or until it appears cooked throughout. Carefully flip the wrap to cook the other side.
- Once cooked, remove the wrap from heat and plate it.
- Add your favorite fillings, such as pesto, capsicum, spinach, red onion, tomatoes, mushroom, parsley, avocado, balsamic vinegar, and any seasonings of your choice.
