As you might know by now, I have a bit of a sweet tooth in the mornings, so usually by lunch I’m craving some savoury and veg. This is a fun way to add some protein to your lunch, and tastes great! It’s so easy to make and healthy too 😊⁣

Serves 1 | GF DF RSF⁣
Ingredients:⁣
Wrap:⁣
1 cup spinach ⁣
2 eggs
Optional: Salt & pepper
Optional: Parsley⁣
⁣
Fillings:⁣
Pesto⁣
Capsicum⁣
Spinach⁣
Red onion⁣
Tomatoes⁣
Mushroom⁣
Parsley⁣
Avocado ⁣
Balsamic vinegar ⁣
Seasonings of choice⁣

Method:⁣
1. Cut up any vegetables you like and sauté in a pan and place aside
⁣2. In a blender add the eggs and spinach
⁣3. Grease a crepe pan and pour on the mixture
4. Cook on low – medium heat for about 10 minutes until it looks cooked throughout, carefully flip
5. Remove from heat and plate
⁣6. Add all your favourite fillings, wrap it up, and enjoy!⁣
