I’m obsessed with my air fryer (along with anyone else who owns one these days) and have been trying different recipes in it.
These cinnamon buns are so quick and easy to make! Crazy that there’s no yeast and it’s just pumpkin, yoghurt and flour!
I was completely inspired by the Fall season (even though it’s getting into summer here in Aus) this recipe will be in rotation all year round!
Serves 8 | RSF
Ingredients:
2 cups self raising wholewheat flour
1/2 cup greek yoghurt
1/2 cup pumpkin puree
3 tbsp coconut sugar
1 tsp pumpkin spice mix
Filling:
2 tbsp coconut sugar
1 tsp pumpkin spice mix
Dairy free butter
Pecans
Pumpkin spice frosting:
1/3 cup greek yoghurt
1/3 cup rsf icing sugar
1 tsp vanilla extract
1 tsp pumpkin purée
Topping:
Pecans
Method:
1. Mix together the flour, pumpkin spice, coconut sugar together
2. Add in pumpkin purée and greek yoghurt
3. Form into a large ball
4. Lightly flour a surface and roll out into a large rectangle
5. Smear on butter over the surface
6. In a small dish mix pumpkin spice and coconut sugar together and sprinkle over top with chopped pecan
7. Roll up into a tube and slice
8. Melt some butter and brush over the outside
9. I air-fried my cinnamon rolls for 10 minutes in my air fryer, but you can bake in the oven for 10 minutes until golden on 180°C
10. In a dish mix together icing
11. Smear over cinnamon buns and sprinkle toasted pecans. Enjoy!
