Apricot Coconut Bliss Balls

Every year my Mum makes these incredible apricot balls for Christmas. They are always a hit and I was inspired to make my own vegan version! They are so easy to make and so delicious 😍

Serves 14 V GF DF RSF
Ingredients:
1 cup cashews
1 cup dried apricots
1/2 cup shredded coconut
1 tsp vanilla bean extract
2 tbsp rice malt syrup
Pinch sea salt

Topping:
Desiccated coconut

Method:
1. Soak cashews in boiling water for 1 hour
2. Drain and add to a food processor
3. Add the other bliss ball ingredients to the food processor and blend
4. Set in the fridge for 10 minutes
5. Scoop out and roll into balls
6. Roll in desiccated coconut
7. Set in the fridge for 15 min, enjoy!
