Mini Salted Caramel Apple Pies

The perfect way to end any night. Gooey caramel, spiced apple, and a soft salty crust. I’ll be making these forever!

Serves 12 V DF RSF
Ingredients:
Pastry:
1 cup wholemeal flour
1 tbsp coconut sugar
1/4 cup coconut oil
3 – 4 ice water
Pinch sea salt

Filling:
2 apples
1/3 cup coconut caramel
Pinch sea salt
1/2 tsp cinnamon

Method:
1. Preheat oven to 220°C
2. Mix together dry ingredients
3. Add in coconut oil and mix together
4. Add 2 tbsp water add more if needed
5. Roll into a ball and freeze for 10 min or refrigerate for 20 min
6. Roll out dough onto a floured surface, use a glass or cookie cutter to cut out a circle for muffin tray
7. Keep the scrap for topping
9. Fill with caramel apple mix and top with strips of pie crust
9. Brush with melted butter and sprinkle some coconut sugar
10. Bake in the oven for 10 minutes or until golden, enjoy!
