Berries & Cream Smothered Banana Bread⁣

As requested I have finally uploaded perfected my banana bread recipe! Here it is after many, many attempts! You can enjoy simply with a slab of butter, but as you know I always love to take things to the next level! This banana bread topping combo is something else 😍⁣

Ingredients:⁣
Banana Bread:⁣
1 cup wholemeal plain flour⁣
1/2 cup coconut sugar⁣
1/4 cup peanut butter⁣
1/4 cup coconut yoghurt ⁣
Pinch nutmeg⁣
1 tsp cinnamon ⁣
1 tsp baking powder⁣
1 tsp vanilla extract⁣
Pinch sea salt⁣
2 eggs⁣
3 ripe bananas ⁣
1/2 cup chopped nuts⁣

Topping:⁣
Coconut sugar⁣
Cinnamon⁣
Chopped nuts⁣
⁣
Blueberries:⁣
1 cup blueberries⁣
Handful thyme⁣
1/2 lemon zest⁣
2 tsp coconut sugar⁣
⁣
Spread:
Coconut yoghurt⁣


Method:⁣
1. Preheat the oven on 180°C
2. Mix together peanut butter, coconut yoghurt and sugar until combined well
3. Add in the eggs and vanilla and combine
4. Then break up the bananas and add to the mixture, slowly blend them in (you want the mixture to still be pretty chunky)
5. In a separate bowl whisk together the dry ingredients
6. Add the dry mixture into the wet, small part at a time, and mix on a low setting
7. Grease and line a loaf tin and pour in the mixture
8. Sprinkle more cinnamon, coconut sugar and chopped nuts on top of the mixture. Use a knife and cut through one line in the middle of the batter
9. Bake in the oven for 50 minutes or until a skewer comes out clean
10. Allow to cool in the baking pan, tip upside down onto a cooling rack and completely cool before slicing
11. Mix together the blueberries ingredients together in a pan until the berries have softened
12. Smother a fresh slice of banana bread with coconut yoghurt and top with piping hot blueberries. Enjoy!

  • use a runny peanut butter
