Flourless, fluffy, healthy pancakes! So simple, you just blend it all together and cook.
Infusing coffee into anything and everything since my first cup. Honestly, there’s nothing better than coffee with more coffee ☕️
Serves 8-12 pancakes GF DF RSF
Ingredients:
Pancakes:
2 cups oats
1 tsp baking powder
1/2 tsp baking soda
1 egg
1 banana
1 cup iced latte
1 tsp vanilla bean extract
1 medjool date
Cashew Topping:
2 tbsp cashew butter
1 tsp vanilla bean extract
Boiling water
Toppings:
Walnuts
Maple syrup
Method:
1. Pour in the dry ingredients together in a blender and blend
2. Add in the wet ingredients and blend together
3. Place aside for 10 minutes to thicken
4. Scoop out 1/3 cup of batter on an oiled frying pan and cook
5. Mix cashew butter topping together in a bowl, add the boiling water and mix until desired consistency is reached
6. Add toppings to the pancakes and enjoy!
