Coffee Walnut Cashew Pancakes⁣

Flourless, fluffy, healthy pancakes! So simple, you just blend it all together and cook. ⁣
⁣
Infusing coffee into anything and everything since my first cup. Honestly, there’s nothing better than coffee with more coffee ☕️⁣

Serves 8-12 pancakes GF DF RSF⁣
Ingredients:⁣
Pancakes:
2 cups oats⁣
1 tsp baking powder⁣
1/2 tsp baking soda ⁣
1 egg⁣
1 banana⁣
1 cup iced latte⁣
1 tsp vanilla bean extract ⁣
1 medjool date⁣
⁣
Cashew Topping:⁣
2 tbsp cashew butter⁣
1 tsp vanilla bean extract ⁣
Boiling water⁣
⁣
Toppings:⁣
Walnuts ⁣
Maple syrup ⁣


Method: ⁣
1. Pour in the dry ingredients together in a blender and blend
2. Add in the wet ingredients and blend together
3. Place aside for 10 minutes to thicken
4. Scoop out 1/3 cup of batter on an oiled frying pan and cook
5. Mix cashew butter topping together in a bowl, add the boiling water and mix until desired consistency is reached
6. Add toppings to the pancakes and enjoy!⁣
