The fluffiest vegan pancakes I’ve ever made! Choc chip cookie dough pancakes loaded with a decadent caramel sauce. I’ve never eaten pancakes so fast, I just couldn’t stop! ⁣


Serves 8 | V DF RSF⁣
Ingredients:⁣
Pancakes:
1 cup wholemeal flour⁣
1 tbsp baking powder⁣
1 tbsp coconut sugar
1 tbsp flaxseed meal⁣
1 tsp cinnamon ⁣
1/2 tsp nutmeg
Pinch sea salt⁣
1/4 cup water
1 cup oat milk⁣
1 tbsp coconut oil
1 tbsp peanut butter
1/3 cup rsf chocolate chips
⁣
Caramel date sauce:⁣
1 cup medjool dates⁣
1/2 cup coconut milk⁣
1 tsp vanilla extract⁣
1 tbsp agave syrup⁣
1/2 tsp sea salt flakes ⁣
⁣
Toppings:⁣
Banana⁣
Rsf chocolate chips

Method:⁣
1. Firstly make the caramel sauce, add the ingredients together and blend until thick creamy sauce is formed
⁣2. Whisk together the dry ingredients
3. In a small dish mix the flaxseed meal with 1/4 cup water and set aside for 5 minutes
⁣4. In another bowl whisk together oat milk, flaxseed mixture, and coconut oil
5. Add the wet ingredients to the dry ingredients and mix together
⁣6. Heat the pan to medium heat, grease, and scoop 1/4 cup of pancake batter and flip. Repeat until all the mixture is gone
⁣7. Serve and top with caramel, banana and more choc chips 😋
