The fluffiest vegan pancakes I’ve ever made! Choc chip cookie dough pancakes loaded with a decadent caramel sauce. I’ve never eaten pancakes so fast, I just couldn’t stop!
Serves 8 | V DF RSF
Ingredients:
Pancakes:
1 cup wholemeal flour
1 tbsp baking powder
1 tbsp coconut sugar
1 tbsp flaxseed meal
1 tsp cinnamon
1/2 tsp nutmeg
Pinch sea salt
1/4 cup water
1 cup oat milk
1 tbsp coconut oil
1 tbsp peanut butter
1/3 cup rsf chocolate chips
Caramel date sauce:
1 cup medjool dates
1/2 cup coconut milk
1 tsp vanilla extract
1 tbsp agave syrup
1/2 tsp sea salt flakes
Toppings:
Banana
Rsf chocolate chips
Method:
1. Firstly make the caramel sauce, add the ingredients together and blend until thick creamy sauce is formed
2. Whisk together the dry ingredients
3. In a small dish mix the flaxseed meal with 1/4 cup water and set aside for 5 minutes
4. In another bowl whisk together oat milk, flaxseed mixture, and coconut oil
5. Add the wet ingredients to the dry ingredients and mix together
6. Heat the pan to medium heat, grease, and scoop 1/4 cup of pancake batter and flip. Repeat until all the mixture is gone
7. Serve and top with caramel, banana and more choc chips 😋
