This is a quick little dinner that I love to make and goes perfectly with a side of dumplings. It’s so simple and you can use whatever produce you have on you.
Serves 2 | V GF DF RSF
Ingredients:
1 cup jasmine rice
1 cup broccoli
1 tsp crushed ginger
1 tsp crushed garlic
1 tbsp tamari
Sesame oil
2 eggs
Toppings:
Pickled onion
Sesame seeds & seaweed
Coriander
Chilli flakes
Butter
Method:
1. Rinse rice out to remove starch and boil 2 cups of water in a pot, once boiled add rice and cook for 10 min on a medium heat
2. Once cooked leave to cool in pot
3. Fill pot with shallow water just enough to cover eggs half way (about 1 – 2 inches) and cook
4. Once water is boiling, cook for an additional 4 min and place eggs in an ice bath
5. In a pan drizzle sesame oil, add minced garlic and onion
6. After a minute add the broccoli
7. Drizzle in tamari
8. In bowls fill with rice and 1 tsp of butter
9. Then top with broccoli and drizzle the sauce from the pan in both bowls
10. Add toppings and enjoy!
