I tried Shankia’s ( @orchidsnsweettea_ ) recipe for flourless waffles and they were incredible! I shared her profile a couple of days ago, if you haven’t checked her out, go check out her blog!
Serves 8 | V GF DF RSF
Flourless Waffles:
2 bananas
1 1/2 cups almond milk
1 tbsp apple cider vinegar
2 tsp vanilla extract
4 tbsp maple syrup
2 tbsp almond butter
4 cups rolled oats
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp sea salt
Coconut whipped cream:
1 can coconut milk
1 tsp vanilla extract
Toppings:
Strawberry compote
Strawberries
Rawtella
Peanuts
Method:
1. Preheat the waffle maker. Whisk the milk and cider vinegar together and sit for 5 minutes
2. Add the mixture to a blender
3. Mash the bananas and add to the blender with the other wet ingredients
4. Top with the dry ingredients and blend for 20 seconds on a high speed
5. Grease the waffle maker and add 1/3 cup of waffle batter (depending on your machine) and cook
6. Repeat with the remaining mixture
7. Place waffles in the oven on a low heat setting to keep warm
8. Use coconut milk that has solidified in a fridge for at least 6 hours and beat or whisk with vanilla extract until fluffy
9. Add the waffles to the plate and add toppings. Enjoy!
