I don’t make pancakes very often, but when I do, I always wonder I don’t make them more. This recipe is healthy and you actually just throw it all in a blender and cook! Smothered in berries, maple and coconut yoghurt makes this such a staple breakfast.
Serves 6 GF DF RSF
Ingredients:
• 2 cups rolled oats
• 1 1/2 tsp baking powder
• 1/2 tsp cinnamon
• Pinch sea salt
• 1 egg
• 1 banana
• 1 tsp vanilla extract
• 1/2 tbsp honey
• 1 cup oat milk
Toppings:
• RSF icing sugar
• Maple syrup
• Blueberries
• Bananas
• Strawberries
Method:
1. Blend the dry ingredients in your blender.
2. Add the wet ingredients and blend.
3. Place aside for 10 minutes to thicken.
4. Scoop out 1/3 cup of batter on a fry pan and cook.
5. Add toppings and enjoy!
