Green Goddess Breakfast Bowl

I’ve been making a lot of delicious treats for recipe testing, so have been craving super fresh bowls for breakfast. This bowl is so good for you and tastes like you’ve paid a lot for brunch.

Serves 1 | GF RSF
Ingredients:
Handful kale
1/4 cup quinoa
1 avocado
1 lemon
1 egg
1 garlic clove
Parsley
Dill
Olive Oil
Salt & pepper

Greek garlic dressing:
3 tsp greek yoghurt
Squeeze lemon juice
Salt & pepper
1/4 tsp minced garlic

Method:
1. Rinse 1 cup of quinoa thoroughly
2. Add to a microwavable bowl with 2 cups of water and microwave on high for 5 minutes
3. Stir quinoa, and microwave again for another 2 minutes
4. There may still be water in the bowl, keep covered until completely cooled, the quinoa will continue to cook and absorb the water
5. Boil a shallow pot of water 1 inch thick, then add the egg and cook for 6 minutes
6. Remove and add to a small bowl of water with ice
7. Cut the kale, mince the garlic and slice up the herbs
8. Add olive oil and garlic to a fry pan, but keep 1/4 tsp of garlic aside for later
9. Toss in the kale to the fry pan and cook until it softens into a vibrant green colour and place aside
10. In a small dish mix the dressing ingredients together
11. Fluff out the quinoa with a fork and add 1/4 cup to a bowl with the kale, egg, slice of avocado and slice of lemon
12. Top with herbs, salt & pepper and a drizzle of the dressing, enjoy!
