This time last year I was spending Christmas in Oslo. It was my first white Christmas, which was a very exciting experience as most Christmases spent have been in summer. I loved the Christmas markets and hot cups of mulled wine which provided warmth to our fingers and Christmas to taste. It is becoming a little tradition of ours now, cold weather or not.

Ingredients:
• 1 bottle red wine
• 1/3 cup coconut sugar
• 1/4 orange peel
• 1/4 orange juice
• 1/4 lemon peel
• 1 inch fresh ginger
• 2 cinnamon sticks
• 1 star anise
• 4 cloves
• 4 cardamom pods
• 4 black peppercorns

Method:
1. Slice ginger, slice peels of a 1/4 of one lemon and orange and juice 1/4 of one orange
2. Add those ingredients to a pot along with coconut sugar and spices
3. Cook on a medium heat until liquid bubbles lightly and caramelises
4. Place on a low heat and pour in the red wine, you want to make sure it doesn’t boil
5. Sit for 20 minutes or if you would like a stronger spiced flavour up to an hour
6. Strain mixture through strainer
7. Serve into heat proof glasses or mugs, garnish with a cinnamon stick and orange slice and enjoy!
