This morning I didn’t want to spend anytime in the kitchen. (Yes, occasionally I don’t feel like cooking.) Queue yoghurt and granola, also peaches are my new obsession.
Serves 2 V GF DF RSF
Ingredients:
Granola:
1/3 cup buckwheat groats
1/4 cup sunflower seeds
1/4 cup coconut flakes
1/3 cup macadamias
1 tbsp maple
1 tbsp coconut oil
1 tsp cinnamon
1 tsp vanilla extract
Pinch sea salt
Toppings:
Coconut yoghurt
Peaches
Cashew butter
Method:
Add the granola ingredients together in a bowl with melted coconut oil and bake in the oven on 180°C for 10 minutes or until browned.
Scoop 1/3 cup coconut yoghurt into a bowl and top with granola and other toppings.
