Raspberry Danish Bircher Recipe | Creamy Overnight Oats with a Raspberry Twist

I’ve recently been enjoying danishes again when I go out for coffee, so was inspired to recreate it into a creamy bowl of overnight oats.

If you’ve been craving the sweet indulgence of danishes but want a healthier option, look no further than Raspberry Danish Bircher. This creamy bowl of overnight oats captures the essence of a raspberry danish while providing a nutritious and satisfying breakfast. With a combination of oats, raspberries, chia seeds, and coconut yogurt, this recipe is a delightful twist on traditional bircher muesli that will leave you feeling energized and ready to tackle the day.

Vegan, Dairy Free, Refined Sugar-Free

Ingredients:

  • 1/3 cup rolled oats
  • 1/3 cup quick oats
  • 1/4 cup raspberries
  • 1 tbsp chia seeds
  • 1/2 cup oat milk
  • 1/2 tbsp rice malt syrup
  • 1 tsp vanilla extract
  • 2 tbsp coconut yogurt

Toppings:

  • Fresh raspberries
  • Crumble
  • Cashew butter

Method:

  1. In a bowl, microwave the raspberries for 30 seconds to soften them.
  2. Mash the raspberries until smooth.
  3. In a separate container, combine the rolled oats, quick oats, chia seeds, oat milk, rice malt syrup, and vanilla extract. Mix well.
  4. Add the mashed raspberries to the oat mixture and stir until well combined.
  5. Cover the container and refrigerate the mixture overnight to allow the flavors to meld together.
  6. The next day, add the coconut yogurt to the bircher mixture and mix well.
  7. Serve the Raspberry Danish Bircher in bowls and top with fresh raspberries, a sprinkle of crumble, and a drizzle of cashew butter.

Directions

  • Add the raspberries to a bowl and microwave for 30 seconds
  • Mixture together until smooth
  • Pour in the other ingredients together besides the yoghurt and refrigerate overnight in a sealed container
  • The next day add in the coconut yoghurt and mix well
  • Place on other toppings and enjoy!
