I feel like there is no middle ground with hummus – you either eat a little or eat the whole thing.
I’ve made my own hummus many times – I started when I couldn’t afford to keep going through a 1kg tub of hummus a week! This smokey hummus adds such a nice touch to any sandwich or salad when infused too.
Ingredients:
1 tin chickpeas
2 tbsp lemon juice
1 tsp smoked paprika
1/4 tsp bicarb soda
1 tbsp olive oil
2 small garlic cloves
2 tbsp tahini
2 tsp liquid smoke
Salt and pepper to taste
Toppings:
Chickpeas
Olive oil
Smoked paprika
Sesame seeds
Method:
1. Drain the chickpeas, rinse under water and remove the skins
2. Add to a food processor, if tinned chickpeas add bicarb soda
3. Add the rest of the ingredients to the food processor and blend until creamy
4. Pour it out and store it in an air-tight container in the fridge. Enjoy!
