Something so alluring about cream filled desserts. Growing up I think it was a combination of the indulgence but also the fun of them. ⁣

It may sound weird, but being from Australia and seeing Twinkies in so many films, it was always a dream to eat one. I eventually did get to try one when visited the States as a kid. ⁣
⁣
Anyway, throwing a few experiences into one, my Twinkie waffle. ⁣

Serves 8 DF RSF⁣
Ingredients:⁣
Twinkie Waffles:⁣
1 cup spelt flour⁣
1 tsp baking powder ⁣
Pinch sea salt⁣
Pinch turmeric powder ⁣
2 cups oat milk⁣
2 eggs ⁣
1 tbsp maple⁣
1 tbsp coconut oil⁣
2 tsp vanilla bean extract ⁣
⁣
Twinkie Cream:⁣
1 tin coconut milk⁣
1 tsp vanilla bean extract⁣
2 tbsp rsf icing sugar ⁣

Method:⁣
1. Preheat and grease the waffle maker
2. Add the dry ingredients to a large bowl and whisk together
3. Add the eggs, melted coconut oil, and the milk and mix together
4. Sit for 5-10 minutes until slightly thickened
5. Add 1/3 cup of batter to waffle maker (depending on your machine) and cook
6. Repeat with the remaining mixture and place waffles on a cooling rack
⁣7. Add refrigerated set coconut milk, vanilla, and icing sugar to a bowl and beat with a whisk head until fluffy
⁣8. Plate waffles and fill with Twinkie cream, enjoy!
