White Chocolate Macadamia Cookies

Thank you Subway for your cookies inspiration behind one of my favourite cookies to date. Gluten free, vegan and soo gooey in the centre.

Serves 10 | V GF DF RSF
Ingredients:
• 1 cup / 100g almond flour
• 1 tbsp coconut oil
• 2 tbsp / 31ml maple syrup
• 1 tsp vanilla bean extract
• 2 tbsp / 25g macadamias
• 2 tbsp / 25g DF white chocolate
• Pinch sea salt

Method:
1. Preheat oven to 180°C / 356°F
2. Mix almond flour, pinch sea salt, coconut oil, maple syrup and vanilla extract in a bowl
3. Chop up macadamias and white chocolate and mix in
4. Refrigerate dough for 10 minutes in the fridge
5. Bake for 5 – 10 minutes until lightly golden
6. Allow to cool slightly
7. Melt white chocolate and drizzle on top. Enjoy!
