Christmas Sugar Cookies

Cookies are just as much fun to bake as they are to eat. These taste so good and also just happen to be vegan!

Serves 18 | V DF RSF

Ingredients:

Cookies:
1 cup wholemeal plain flour 
1/2 tsp baking powder
3/4 cup rsf icing sugar 
3 tbsp coconut oil
1/4 cup oat milk
1 tsp vanilla bean extract
1 tbsp cornstarch 
Pinch sea salt 

Icing:
1/4 cup df butter
3/4 cup rsf icing sugar 
1 tsp vanilla bean extract

Topping:
Christmas sprinkles

Method:

  1. Preheat oven to 180°C
  2. Mix dry ingredients together 
  3. Add wet ingredients and mix in
  4. Refrigerate dough for 10 minutes
  5. Flour a surface and roll out dough
  6. Cut out shapes and add to lined baking tray
  7. Bake in the oven for 10 minutes or lightly golden
  8. Beat together the butter in a bowl, add icing sugar and vanilla and beat
  9. Ice cookies
  10. Top with sprinkles
