Cookies are just as much fun to bake as they are to eat. These taste so good and also just happen to be vegan!

Ingredients:
Cookies:
1 cup wholemeal plain flour
1/2 tsp baking powder
3/4 cup rsf icing sugar
3 tbsp coconut oil
1/4 cup oat milk
1 tsp vanilla bean extract
1 tbsp cornstarch
Pinch sea salt
Icing:
1/4 cup df butter
3/4 cup rsf icing sugar
1 tsp vanilla bean extract
Topping:
Christmas sprinkles
Method:
- Preheat oven to 180°C
- Mix dry ingredients together
- Add wet ingredients and mix in
- Refrigerate dough for 10 minutes
- Flour a surface and roll out dough
- Cut out shapes and add to lined baking tray
- Bake in the oven for 10 minutes or lightly golden
- Beat together the butter in a bowl, add icing sugar and vanilla and beat
- Ice cookies
- Top with sprinkles
