Apple Pie Donuts

Baked donuts filled with spiced apples, topped with white chocolate. This recipe was tried and tested and took me a long time to perfect and I am so happy with the results. 

Serves 4 | RSF

Ingredients:
• 1 cup wholewheat flour
• 1 tsp baking powder
• 1/2 tsp baking soda
• 2 tbsp cornstarch 
• Pinch sea salt
• 1 cup greek yoghurt 
• 1 tsp vanilla 

Apple mixture:
• 1 apple 
• 1/4 cup apple sauce
• 2 tbsp coconut sugar 
• 1 tsp cinnamon

Topping:
• Vegan white chocolate 
• 1 tsp pumpkin spice 

  1. Preheat oven to 180°C
  2. Peel an apple and add apple mixture in a pot until caramelised 
  3. In a bowl mix the dry ingredients together
  4. Add the wet ingredients to the dry
  5. Flour a surface and form into 4 balls
  6. Form a little hole in the centre of dough and scoop in apple mixture and cover
  7. Bake in the oven for 15 minutes or until golden
  8. Melt chocolate for topping and add in pumpkin spice
  9. Dip donuts upside down in topping, dash with more pumpkin spice, enjoy!
