I feel like I’ve been waiting all year to enjoy these seasonal flavours. My entire kitchen smelled like Christmas when baking this granola. It’s amazing! Plus, it makes a cute Christmas gift idea!
Makes 750g | GF DF RSF
Ingredients:
Gingerbread Granola:
• 1 cup oats
• 3/4 cup buckwheat groats
• 1/3 cup walnuts
• 1/4 cup pecans
• 1/3 cup sunflower seeds
• 1/4 cup melted coconut oil
• 2 tbsp honey
• 2 tsp gingerbread spice
• Pinch sea salt
Gingerbread spice:
• 1 tbsp cinnamon
• 1 tbsp all spice
• 1 tbsp ginger
• 1 1/2 tsp nutmeg
• 1 1/2 tsp cloves
• 1 tsp cardamom
Toppings:
• Coconut yoghurt
• Almond butter
• Blueberries
• Blackberries
Method:
1. In a small bowl add the gingerbread spice ingredients together and store in a small shaker bottle.
2. Mix all the granola ingredients together in a large bowl.
3. Pour out mixture into a baking tray.
4. Bake in the oven on 180°C for about 10 minutes or until golden.
5. Allow to completely cool and store in an airtight container.
6. In a bowl, scoop out coconut yoghurt, granola, berries and almond butter. Enjoy!
