I had a very relaxing few days off since my sister’s wedding and it’s been amazing to spend time thinking about the coming year.
Being Sunday, I was craving a big breakfast, but with a twist!
Serves 1 DF RSF
Ingredients:
Sourdough
1/2 avocado
1/2 tomato
1 egg
1/3 cup kale
Basil
Salt & pepper
Method:
1. Toast the sourdough
2. Pan fry the kale and tomato
3. Bring a pot of water to boil on the stove
4. Crack an egg into a small dish and slide it into the water
5. Cook for 3 minutes and add to a small bowl of iced water
6. Add the avocado, tomato, poached egg, and kale to the toast
7. Top with basil and salt and pepper, enjoy!
