Jelly Donut Baked Oats

It’s been a while since I’ve made baked oats, but there’s nothing like a trend to get you back.

Warm cinnamon sugar oat cake filled with a warm raspberry compote is a dream combination and is so simple to make.

Serves 1 | V DF RSF
Ingredients:
1/2 cup oats
1/2 cup oat milk
1/2 tsp vanilla extract
1/2 tsp baking soda
1/4 cup apple puree

Jelly Filling:
1/4 cup frozen raspberries
1/2 tbsp chia seeds

Topping:
1 tsp coconut sugar
1/4 tsp cinnamon

Method:
1. Preheat oven to 180ºC
2. Blend all the ingredients together
3. Microwave jelly ingredients for 1 minute and mix together and set aside
4. Pour 3/4 of the batter in an ovenproof dish
5. Scoop out some of the jelly
6. Pour the remaining batter
7. Sprinkle with cinnamon and coconut sugar on top
8. Bake in the oven for up to 25 minutes or until a skewer comes out clean

  • Carefully remove and enjoy straight away!
