This entire breakfast, was made entirely of last night’s leftovers. Getting creative with what you have can make for some of the best food experiences. Leftovers or not, this is worth a try any day of the week. Full of flavour and an exciting way to enjoy Mexican inspired flavours for breakfast.

Ingredients:
• Sourdough
• Avocado
• Tomato
• Black beans
• Corn
• Kale
• Quinoa
• Red onion
• Coriander
• Lime
Method:
1. Toast the sourdough
2. Cut the avocado and mash one half with lime juice
3. Slice tomato
4. Heat black beans, corn, quinoa and sautée kale and add to toast
5. Top with sliced red onion, coriander and a lime wedge
