Mint Chocolate Chip Smoothie Bowl – Refreshingly Delicious and Nutritious!

Serves 2 | V GF DF 
Vegan, Gluten Free, Dairy Free
Ingredients:

  • 2 frozen bananas
  • 1/4 cup frozen zucchini (optional)
  • 1/3 cup frozen spinach
  • 1/3 cup almond milk
  • Handful of fresh mint leaves
  • Handful of cacao nibs
  • 1 medjool date

Toppings:

  • Chocolate granola
  • Cacao nibs
  • Chocolate almond butter
  • Coconut yoghurt
  • Fresh mint leaves

Method:

  1. In a blender, combine the frozen bananas, frozen zucchini, frozen spinach, almond milk, fresh mint leaves, and the medjool date. Blend until the mixture is smooth and creamy.
  2. Once the smoothie reaches a creamy consistency, add the cacao nibs to the blender and blend for a few seconds until they are just combined.
  3. Pour the smoothie into bowls.
  4. Add your desired toppings, such as chocolate granola, cacao nibs, dollops of chocolate almond butter, coconut yoghurt, and fresh mint leaves.

Directions

  • Blend together smoothie ingredients, besides the cacao nibs until just combined and creamy, once creamy add the cacao nibs and blend for a few seconds until just combined 
  • Pour into bowls
  • Add toppings and enjoy!
